Summer Seasonal Focus: Tomatoes, Cucumbers & Almonds ‘Oh MY’, Listening to you. Seasonal food conversations in a plight to serve your well being and the well being of others. Recipe: Bruschetta 1 lb. Roma tomatoes (about 6-8, seeded and diced) 1/4 cup olive oil 3 cloves garlic (minced) 1/4 cup red onion Minced 2-3 tsp. balsamic vinegar, chocolate infused 1/2 cup fresh basil (torn) Himalayan Salt Freshly ground black pepper 1 loaf French baguette Shredded Parmasean fresh basil Instructions: 1. Combine ingredients in a medium bowl. 2. Season generously with salt and pepper and let sit for at least 15 minutes. 3. Meanwhile, cut baguette into half-inch slices and toast in the oven at 350 degrees for about 3-5 minutes, or until golden and crispy around the edges or on an indoor grill. Cool before serving. 4. Place a spoonful of the tomato mixture on top of each baguette slice and top with fresh basil and a drizzle of balsamic with grated parmesan. Serve immediately.
