Ratatouille is a French dish consisting of stewed vegetables that are high in fiber, protein, and vitamins and minerals. Here are some of the health benefits of the ingredients that normally go into ratatouille. Tomatoes contain Vitamins B6, C, and K, as well as beta-carotene and the antioxidant lycopene. Lycopene has been linked to a reduced risk of heart disease and cancer, and improved heart health. Cooking tomatoes increases the antioxidant activity of lycopene. Zucchini contain B-group vitamins, which are important for energy metabolism. Zucchini is also high in water and fiber, which can help with digestion and reduce the risk of constipation. Eggplant contains manganese and provide small amounts of potassium, vitamin K, vitamin C, vitamin B6, niacin, copper, and magnesium. Herbs in ratatouille have anti-inflammatory properties that can strengthen the immune system and lower blood sugar and cholesterol levels. Garlic is useful for boosting the immune system. Olive oil contains healthy fats and polyphenols, and can help your body absorb fat-soluble vitamins from other ingredients. So whenever you're in the olympic spirit and feel the urge to try some French cuisine be sure to give ratatouille a shot.
