Oxtails

Ingredients:
10 lbs. of Oxtails cut medium thick
2 medium onions minced
5 cloves of garlic minced
7 Jamaican Pimentos or black peppercorns
5 sprigs of fresh thyme
1 ½ tablespoon of Lawry’s (yes I use this in it. Makes for a better seasoning mix)
½ teaspoon black pepper
½ can of tomato paste
1 tablespoon bbq sauce
1 teaspoon brown sugar
½ cup dry lima beans uncooked.
In a large pot, and put it on a medium fire. Put enough oil in the pot to coat the bottom. Place the onions garlic and oxtails in the pot once it is hot. Pour the seasoning in and mix. Allow it to brown stirring occasionally to ensure that it is all getting brown. Cover the oxtails, turn the fire down, and cover them. Allow it to cook for 2 hours, stirring occasionally and watching the water level. Add water if needed. Now in a separate pot mix the tomato paste, bbq sauce, and brown sugar with a ¼ cup of water. Let that simmer for 5 minutes. Pour that in the pot with the oxtails and the beans. Let it cook for another hour and half to 2 hours. Remove the Oxtails and put them in a pan and bake uncovered for 20 minutes if you want them dry. Reserve the gravy.
