Welcome back to the Hammer & Ellen J show!!! It's Friday, and you know what that means...we're cooking with Chef Cherise!!!
Chicken and Dumplings Servings: 4 Calories per serving: 194 Ingredients: 1 large chicken cut up 1 large onion, peeled and cut in quarters 3 carrots, cut into medium pieces 3 stalks of celery, cut into medium pieces 5 cups of chicken stock Lawry’s, to taste Pepper, to taste Dumplings: 3 cups cake flour 3/4 tsp. baking soda 3/4 tsp. salt 4 1/2 tbsp. shortening 1 cup Directions: In a pot add the onions, celery, carrots, chicken. Lawry’s and pepper. Cover the ingredients with the chicken stock and allow to cook on a low heat. Dumplings Directions: In a bowl mix the flour, baking soda, salt., add the shortening and mix until it crumbles. Add the milk slowly and mix with your hands until it comes together and forms a ball of dough. Do not overmix! You can break off small pieces or roll the dough out into triangles or squares. Place them on a floured flat pan or plate and refrigerate. Once the chicken is cooked, remove it and place it into a bowl. You can remove the vegetables or leave them in. Turn the fire up high until the water is boiling. Drop the dumplings in and allow them to cook. Turn the fire down and add the chicken back. Serve and enjoy!
