It's Friday and that means that our favorite chef---Chef Cherise---is in the house!!! Today, Chef Cherise is whipping up another comfort food recipe---Wedding Soup.
Wedding Soup Servings: 4 Calories: 170 Ingredients: 1⁄2 lb lean ground turkey 1 egg 2 tablespoons breadcrumbs 1 tablespoon parmesan cheese 1⁄2 teaspoon dried basil 1⁄2 teaspoon onion powder 5 3⁄4 cups chicken broth 2 cups chopped escarole or chopped spinach 1⁄2 cup orzo pasta, uncooked 1⁄3 cup finely chopped carrot Parmesan cheese Directions: In a bowl beat the egg, add the ground turkey, seasonings, parmesan, breadcrumbs and mix together. Form into small meatballs and place to the side. In a pot, heat some oil over a medium heat. Add the carrots and allow to become almost soft. Add the meatballs and allow to brown. Add the broth, cover and allow to cook for 10 minutes. Add the orzo, stir, cover and allow to cook for another 15 minutes. Stir, add the spinach or escarole. Allow to cook until it is soft.
