4 medium portabella mushrooms, stems removed 1 medium red onion sliced 3 tablespoons olive oil 1 avocado, sliced 2 tablespoons of your favorite spread 1/2 tsp minced garlic 4 whole grain or wheat hamburger buns, lightly toasted 4 slices of a tomato Salt to taste Pepper to taste Lightly season the mushrooms with salt, pepper, olive oil, and garlic. Bake on 350 degrees until tender. Take your favorite spread on the top and bottom of the buns. Place some lettuce, the mushroom, tomato, onion, and avocado. Serve and enjoy! Creamy Dijon Dressing 4 ounces’ organic silken tofu ¼ cup organic flax oil 1 medium clove garlic, crushed 1 small tomato 2 teaspoons organic Tamari soy sauce 3 Tablespoons water ½ teaspoon Dijon mustard 2 ¼ Tablespoons rice vinegar 3 Tablespoons lemon juice 1 Tablespoon apple cider vinegar 1 1-inch chunk onion 1 Tablespoon minced chives 2 teaspoons dried dill weed ¼ teaspoon sea salt Combine all ingredients in a food a blender and blend to a creamy consistency.
