Food-hounds rejoice...Chef Cherise is back and joins Brian Hammer Jackson & Ellen J live in the studio once again, this time to share with us, her recipe for Vegetable Bolognese. If you would like to cook along with us, here are the ingredients and directions for this delectable dish:
Ingredients Zucchini Cauliflower Carrots Mushrooms Yellow onion Garlic 1 can Crushed tomatoes 1 can sauce Sundried tomatoes Salt Oregano Dried basil Angel hair pasta Directions Soak the sundried tomatoes in water. Cut the cauliflower, carrots, mushrooms, garlic, and onions. Pulse until they are shredded into small pieces. Place the vegetables in a skillet and cook on medium heat until the liquid is cooked out. Remove from the fire and place to the side in a bowl. Add the cans of tomatoes in the skillet and cook on low. Season with the basil, oregano, and salt. Allow to cook until thickened. Add the vegetables and allow to cook in the sauce for 10 minutes. Boil the noodles until soft but not overcooked, remove from the pan, rinse in a colander and add them to the pan with the vegetables. Mix thoroughly, plate and enjoy.
